Mary (Edwards) Vincent, 73, of Scotia, Nebraska, passed away on July 8, 2025, following a long and hard fought battle with colon cancer.
Mary was born on March 10, 1952, to Orville and Emzia (Campbell) Edwards in Danville, Arkansas. Mary was the youngest of 5 children and spent the majority of her young life in Wichita, Kansas. Mary graduated from Wichita North High School in 1970.
Shortly before graduating high school, Mary met the love of her life, Stephen (Steve) C. Vincent, while he was stationed at McConnell Air Force Base in Wichita. They married April 23, 1972, in an intimate wedding at a local park in Arkansas City, KS. Throughout their marriage, Mary and Steve lived throughout the country, from California, Colorado, Massachusetts, Nebraska, New York, and finally returning to Nebraska where they remained through Mary's illness and death.
Throughout her life, she enjoyed camping and exploring the different states in which she and Steve lived, but her true passion was working in her flower garden. Whenever she and Steve moved to a new location, her first task would be to plan her flower garden for the next growing season.
Mary was known for her kind and generous spirit, and she enjoyed giving back to the community. During her time in Grand Island, NY, Mary was a volunteer leader with Son Light Singers youth group through the Methodist church and was instrumental in the creation of "Reality Café", a youth run coffee house and rec center. After her move back to Nebraska, Mary continued to serve as a Sunday School teacher and Youth Group leader, helping to lead a mission trip to Puerto Rico.
Mary had dreamed of owning her own Hot Dog cart and in 2006, Mary opened "Mom's Classic Dogs", a hot dog cart she ran in Norfolk, NE. The basis of her business was the Bible verse Isaiah 40:31, "But those who hope in the Lord will renew their strength. They will soar on wings like eagles; they will run and not grow weary; they will walk and not be faint." Mary served each hot dog with inspiration and little bit of humor, providing a joke with each order.
In the final years of her life, Mary enjoyed spending time with her husband, kids, and grandkids in Scotia, NE. She continued to work in her garden and making memories with her family up until the very end.
Mary felt her greatest accomplishment in life was being a mother to her and Steve's children: Jesse Vincent of Fremont, Michelle (Luke) Zangger of North Loup, and Aspen Vincent (deceased); and grandmother to their 6 grandkids: Coleton Vincent, Micah (Angie) Vincent-Bernal, Sophea Vincent, Oliver Zangger, Adalynn Zangger, and Esme' Zangger.
Mary was preceded in death by numerous loved ones, including her parents, siblings, and her daughter, Aspen, who was stillborn in 1991.
A Celebration of Life will be held at 10:30 a.m. on Saturday, August 23, 2025, at the Ord Memorial Chapel in Ord, Nebraska. All who knew Mary are welcome to attend to share in remembering a life well lived. In accordance with her wishes, Mary was cremated. There will be no burial service.
